COTW: Nothing Rhymes With Purple

This week Josh Powell, Head Bartender at 68 and Boston in Soho, has whipped us up this delightful cocktail; Nothing Rhymes With Purple. He uses Habanero and Beetroot infused Ketel 1 Vodka to craft this awesome and heavenly drink. Enjoy!
Ingredients
50ml Habanero and Beetroot Infused Ketel 1 Vodka*
10ml Malbec
15ml Apple Juice
20 Lime
10 Sugar Syrup
10 Celery Syrup**
Egg White
Method: Combine all ingredients in a shaker and dry Shake. Shake with ice and then fine strain into a coupe. Garnish with a Creole Bitters swirl.
*To make the Habanero and Beetroot infused Ketel1 vodka, add 1 1/2 cooked beetroots and one chopped and de-seeded habanero pepper into a large cream whipper with 700ml Ketel 1. Charge with two cream canisters and release the pressure. Then squirt back into the empty vodka bottle. Alternatively, if you don't have a cream siphon you can leave the beetroot and habanero to infuse over the course of three days. After the first day, the habanero needs to be taken out so the vodka doesn't get too spicy.
**To make the celery syrup, add a whole stick of chopped celery into a bottle of 1:1 simple syrup. Leave to infuse for 5 days.
