COTW: Solera Fashioned

This week we've got one awesome COTW from Smokin' Aces General Manager, Luke Shepard. He uses Glenfiddich 15 YO Solera and vanilla infused Madeira to create one hell of a cocktail. Enjoy!

Ingredients

60ml Glenfiddich 15 YO Solera

20ml Vanilla Fudge Infused Madeira*

5ml Gonzalez Byass Noe 30 YO PX

Couple of Drops of Chocolate & Cardamom Bitters

Method: Fill a chilled, heavy Old Fashioned glass with ice, add in all ingredients and stir down for no more than 10 seconds. Serve. No garnish.

*Method: (For the vanilla infused Madeira)

Get a couple of decent sized, crumbly vanilla fudge pieces and crush into a course powder. Sous vide with 200ml Madeira wine (not too sweet - it needs a hint of bitterness to it). Leave to infuse at 60 degrees for a few hours - 4/5 should do it. Strain liquid through a coffee filter to remove any solids.
