COTW: Cornish Pastiche

We've got another dexterous cocktail delight this week from our ingenious Hix Oyster and Fish House Head Bartender; David Smith. Here he shows you how to use Tarquin's Cornish Pastis and turn it into one delectable tipple. Bottoms up!
Ingredients
50ml Tarquin’s Cornish Pastis
15ml Mark’s Lime Cordial
100ml Julian Temperley Discovery Apple Juice
6 mint leaves
4 mint leaves to Garnish
Method: Add the pastis, mint & lime into a mixing glass and smash up. Add the apple juice and fill the mixing glass with ice. Stir for 10 seconds until sufficiently chilled. Strain through a Fine strainer into a glass teapot. Fill the teapot with ice & garnish.
